The middle of summer is always so crazy. My mom is currently here visiting. Yay!!! My husband is away all summer for work 🙁 And we are gearing up for another hockey season for my oldest son. We’ve been so busy… I am loving going to the farmers market every weekend. This meal plan takes advantage of all the fresh produce, especially the zucchini!
Here’s what’s for dinner this week:
Monday- Crispy Parmesan Garlic Chicken with Zucchini by Recipe Critic

Wednesday- Marinated Kale and Chicken Bowls with Sun-Dried Tomato Sauce by Pinch of Yum
Thursday– Maple Pecan Salmon by Mels Kitchen Cafe with broccoli and rice
Friday – Soccer = Pizza night!
Saturday- Simple Rainbow Salad with Hummus Dressing by Deliciously Ella
Sunday – One Pot Mushroom Herb Chicken Orzo by Creme de la Crumb
30 minute meals are amazing! And totally essential in my life right now.
Any leftovers will be used for lunches. My boys are loving turkey breast and veggie wraps for lunch too right now. Breakfast is often a smoothie like this one or oatmeal with apple and raisins.
